Hacienda El Aguacate
A restored 19th-century mill turned off-grid eco-estate, roughly two hours from San Miguel de Allende. Designed by architectural studio GOMA, it pairs regenerative design with minimalist luxury: clay tile floors, recycled quarry stone, a gold-leafed dining hall and wooden lofts built from salvaged beams. Two terraces open onto natural pools and curated trails.
