Pinda
Pinda is one of San Miguel’s most exciting new openings, bringing together contemporary Mexican design and a kitchen built around fire. Led by chef Emiliano Ayala, the menu is centered around the grill, where smoke, flames, and fresh ingredients do most of the talking. Dishes are meant to be served family-style, placed at the center of the table and shared, one of our favorite things about Pinda. Come with friends, order a little bit of everything, and let the table fill up. Ayala trained in Bilbao and worked alongside some of the biggest names in Basque gastronomy before returning to Mexico, bringing with him a cooking style rooted in technique, respect for the ingredient, and a close relationship with local producers. The space is just as much a part of the story. Designed by Mario Ballesteros, Pinda was conceived through a distinctly Mexican lens, bringing together artisans, makers, and suppliers from across the country. Almost everything you see and touch carries a story of Mexican craft and technique, giving the space a strong sense of identity. And then there’s the wine... Pinda has a seriously good wine list, and the terrace has quickly become one of our favorite spots to open a bottle, order a few plates for the table, and stay awhile. It’s that sweet spot we love: polished, but never pretentious. Come hungry, bring friends, and take your time.
